Sauce is inseparable from grilling. What's a hamburger without ketchup? Do you like to dip your mini schnitzel in mayonnaise? And how about barbecue sauce? As the name says, this sauce is very suitable for a barbecue evening. However, we believe that this sauce should not be missed when you take the grill out of the cupboard for a delicious grill evening.

Mayonnaise

Mayonnaise is the basis for many other sauces, which is why it is a good sauce to start with. The nice thing about mayonnaise is that you can give it your own twist. Do you like Belgian mayonnaise, which is just a bit more sour? Then add some lemon juice to the mayonnaise. Do you like sweeter Dutch mayonnaise? Then add some icing sugar.

A golden tip for making mayonnaise: make sure all ingredients are all at the same temperature to prevent curdling.

Ingredients:

  • 2 egg yolks
  • 4 tbsp white wine vinegar
  • 2 tsp mustard
  • 700 ml of sunflower oil
  • Pepper and salt to taste

Preparation:

  1. Combine the egg yolks with the vinegar and mustard
  2. While whisking, pour the oil into this mixture (in a thin stream): beat to a thick, smooth sauce. If the mayonnaise is too thin, add a little more oil. If the mayonnaise is a bit too thick, add some water.
  3. Season the mayonnaise with salt and pepper

Tomato ketchup

Ketchup is low in calories, which makes the sauce healthier than mayonnaise, for example. This is mainly because tomato ketchup - as the name suggests - is made from tomatoes. However, this does not mean that ketchup is healthy, because it also contains a lot of sugars.

Ingredients:

  • 2.5 kg of ripe beef tomatoes, without crowns, in pieces
  • 1,7 oz tomato paste
  • 100 ml of vinegar
  • 1 large onion, chopped
  • 1 celery stalk, cut into pieces
  • 1 red pepper, cut into pieces
  • ½ red pepper, cut into pieces
  • 1,5 inch fresh ginger, peeled and grated
  • 1 cinnamon stick
  • 2 star anise
  • 2 tsp mustard
  • 1 tsp dried oregano
  • 2 cloves of garlic, chopped
  • 3,5 oz cane sugar
  • Potato starch (optional)

Preparation:

  1. Put all ingredients, except the sugar, in a pan and cook for about 1 hour. Stir regularly so that the mixture does not stick to the bottom of the pan. Add the sugar and cook for another 15 minutes
  2. Remove the cinnamon stick and star anise and mix with the hand blender to a smooth sauce
  3. If the taste is good, but the sauce is too thin, bind the ketchup with some potato starch

Garlic sauce

Garlic is an ingredient that turns any "boring" dish into a true taste sensation. That is why a good garlic sauce cannot be missed during a tasty grill evening! Making a tasty garlic sauce is very easy.

Ingredients:

  • 3 cloves of garlic, grated (of course you can always put extra garlic in the sauce)
  • 200 ml whipped cream, beaten lumpy
  • 100 ml full-fat yogurt
  • 7 oz mayonnaise
  • ½ bunch of chives, finely chopped
  • Pepper and salt to taste

Preparation:

  1. Mix the garlic with the whipped cream, yogurt, mayonnaise and chives and stir into a nice sauce
  2. Season the sauce with salt and pepper

Barbecue sauce

Are you planning to dip the meat in the barbecue sauce, or are you going to cover that tasty piece of chicken or beef with barbecue sauce while it is grilling? If you’re planning to cover the meat with the barbecue sauce, we recommend to thicken the sauce a bit.

Ingredients:

  • 2 tbsp sunflower oil
  • 1 clove of garlic, chopped
  • 1 onion, chopped
  • 1 tbsp coriander seeds, ground
  • 1 star anise
  • 2 cm fresh ginger root, peeled and grated
  • 200 ml tomato ketchup
  • 50 ml sweet soy sauce
  • 2 tbsp ginger syrup
  • Dash of rice vinegar
  • 1 tsp sambal bathrobe
  • 1 tsp cumin powder

Preparation:

  1. Heat the sunflower oil in a pan and fry the garlic, onion, coriander and star anise for about 2 minutes
  2. Add the ginger zest, tomato ketchup, soy sauce and ginger syrup
  3. Season the sauce with a dash of rice vinegar, sambal bathrobe and cumin powder
